Cheryl's Kitchen: Nutella Banana Cake

Decided to bake cake on yesterday with Eleanor13
Vanilla Essence + Red Colouring + Nutella

White Sugar + Cake Flour

Ingredients needed for the Nutella Banana Cake:
8 eggs, separated to whites and yolks
190 g sugar
150 g Cake Flour
45 g butter, melted
1 tsp vanilla extract
1/2 tsp Cream of Tar Tar
Nutella

Red Colouring

16 This is how we separate the yolk from the egg white.

Yolk

Place the egg yolks into the mixer and mix them on a high speed until creamy. After a minute, add about 2 tbsp of sugar. Continue to mix for a few minutes more until the mixture becomes thicker.

You can now add the vanilla extract. Keep mixing until the mixture becomes double that of its original volume. Now turn off the machine and transfer the egg yolks to a separate bowl.

Wash your mixing bowl and the attachment well in preparation for whipping the egg whites.

Place whites into the clean mixer bowl.
Beat them on high and let them whip until they become white and frothy.
Now slowly add the sugar a bit at a time.
The whipped egg whites mixture is ready when it clings to the beater attachment but does not drip. Once the mixture is nice and stiff, turn off the mixer.

Now you can introduce the egg yolks to the egg whites mixture. Add the whipped egg yolks into the egg whites and fold them in with the rubber spatula. Make sure not to over-mix.
Mix them.


22 Next, we need to introduce the Cake flour to the eggs. Start by combining the flour and the corn starch in the sieve and using your hands, slowly sift it into the mixture. Sifting the flour will increase the amount of air in the cake, helping to make it even lighter.


Fold it all together remembering again not to over-mix and then add the melted butter to the batter, combining it in briefly.

and bake for around 15mins
test the cake to see it is ready

Cheryl's Kitchen: Sushi Making

This is my 3rd time making sushi.
Isn't that difficult but lot of time needed.
Never use normal rice to make your sushi.

02Vinegar For the rice.

Ingredients needed for the Sushi Rice:
3 cups Japanese rice
    3 1/4 cups water
    1/3 cup rice vinegar
    3 Tbsp sugar
    1 tsp salt

Cook the Japanese Rice with 3 1/4 cups of Water.
Mix 1/3 cup rice vinegar +  3 Tbsp sugar + 1 tsp salt after the rice is cooked.

You can put alittle more Vinegar.
Just try it and see if you need more vinegar.
I usually put slightly more.

Dashi Stock!
Very important for Japanese Dish.
Use it for Chawanmushi


Ingredients needed for the Chawanmushi:
3 eggs
2 cup dashi soup stock (2 Pack of Dashi)
1/2 tsp salt
1 tsp soy sauce
1 tsp sugar

Crab Stick/Chicken

Lightly beat eggs in a large bowl. Try not to bubble the eggs.
Add cool dashi soup stock, soy sauce, salt, and sugar in egg mixture gradually.
Put chicken/Crab Stick the bowl.
Fill the bowl with the egg mixture.
Use a clean cloth to cover the lid before covering the pot.
Place a chopstick to prevent the lid from covering fully.
Steam for a few minutes on high heat.
Turn down the heat to low and steam for about 10-15 minutes, or until done.
Poke a chopstick in the chawamushi and if clear soup comes out, it's done.

Cook it with alittle of Dashi Stocks.
